🦐 Jules’ Recipe Of The Month 🦐

With the stress of completing a dissertation during these past few weeks, my diet has taken a pretty questionable turn for the worst. A lot of coffee, a lot of ready meals and a lot of sugary snacks were needed for those all-nighters. But having submitted my 10,000 words on Monday (YAYYYY!!) I am now determined to get my healthy eating regime and love for cooking back on track! And what better way to kick it off with these amaaaazing prawn fajitas with homemade guacamole? Quick, cheap and so delicious, impress your housemates at your next fajita night.  

Ingredients: 

2 limes 

1 packet of large prawns (they can be raw or ready to eat) 

1 red chilli, deseeded and chopped 

2 garlic cloves, finely chopped 

coriander, chopped 

1 avocado 

1 tbsp natural yogurt 

olive oil 

salt/pepper 

1 red pepper, sliced 

4 flour tortillas

Recipe: 

1) In a small bowl or dish, mix together the juice of one lime, half the chilli (do NOT get carried away with this), half the garlic, half the coriander and a pinch of salt and pepper. I like to add a little bit of lime zest for extra lime-ness. Add your prawns, stir them around a bit to ensure they are all coated and leave to marinate whilst you prepare your guac. 

2) In a food processor, blitz up the avocado, natural yogurt, juice of one lime and the remainder of the garlic, coriander and chili (again – be reasonable, we want a kick not an inferno) until smooth. Transfer to a cutesie little serving dish. 

3) Heat the oil in a frying pan on a medium-high heat and cook your peppers until they begin to soften. Add your prawns and as much of the marinade as you can scrape off the sides of the bowl. If you’re working with raw prawns, cook them until they turn pink, otherwise just toss them with the peppers until hot.  

4) Chuck the tortillas in the microwave for 30 seconds and it’s a wrap (sorry). Serve with your homemade guac and some dressed salad leaves for extra health points.
